Wisdom and tradition
The harvest is done manually and in individual boxes of 20 kg so that the grapes do not suffer and arrive in the best conditions, it is now when the fruit of a whole year of work is collected. This grape is immediately transported to the winery where it remains in refrigeration throughout the night to proceed to the selection of the best bunches first thing in the morning.
The grapes remain refrigerated throughout the night and first thing the next morning, the best bunches are selected and the stemmed, without squeezing the grapes.
